Cajun Grilled Quesadilla and Spanish Rice

Ingredients:
4 Gorton's All Natural Cajun Blackened Grilled Fillets1 cup water
1 cup salsa
1 cup unprepared instant white rice
2 cups cheddar cheese, shredded
4 soft tacos
Directions:
1. Prepare Gorton's All Natural Cajun Grilled Fillets according to package instructions.
2. In the meantime, bring water and salsa to a boil in a saucepan, stir in instant white rice, cover and remove from heat for 5 minutes.
3. Spread cooked fillet evenly over each taco using a fork, top each with 1/2 cup cheese and place on a baking sheet.
4. Broil until cheese is melted, top with another soft taco, cut into wedges and serve immediately with rice.
Notes:
Make it a party! Accompany your quesadilla with some guacamole, sour cream and salsa.
