Air Fried Eggplant Parmesan with Crusted Fish

Comfort food doesn’t mean more time in the kitchen. More Than Cocos’ recipe for Air Fried Eggplant Parmesan with Parmesan Crusted Fillets is easy and delicious with mozzarella, parm and marinara sauce.

Directions
1. Arrange the eggplant slices on several baking sheets and sprinkle salt all over. Set aside for about 1 hour.
2. Transfer the eggplant to a colander in the sink, rinse well with cold water. Remove and blot dry with paper towels.
3. Place eggplant slices in the air fryer and sprinkle with salt and olive oil, add your favorite marinara sauce on top of each eggplant slice followed by mozzarella and parmesan cheese. Lastly, add 2 Parmesan Crusted fish fillets on each slice and air fry for 10 minutes at 400°F, until cooked to an internal temperature of 165°F or higher.
4. Remove from the oven and serve warm.
Ingredients
1 large eggplant, sliced vertically about ⅓ inch thick
Salt to taste
Olive oil to drizzle
1 cup marinara sauce
1 cup shredded mozzarella cheese
1/2 cup sheered parmesan cheese
8 Gorton’s Parmesan Crusted fish fillets
Optional: more parmesan and basil to sprinkle.
