Directions

  1. Preheat oven to 425°F. Prepare Gorton’s Beer Battered Cod according to package instructions.
  2. In a bowl, toss sliced squash, zucchini and tomatoes with olive oil and garlic.
  3. Put an even layer of vegetables in a shallow baking pan and top with parsley, salt and pepper.
  4. Prepare Gorton’s Parmesan Roasted Cod according to package instructions; add roasted vegetables to bottom rack of oven for 20 minutes.
  5. Top vegetables with parmesan cheese and serve with Gorton’s Parmesan Roasted Cod.

1 Yellow summer squash thinly sliced
1 Zucchini thinly sliced
1 cup Grape tomatoes
2 tbs. Olive oil
2 cloves minced garlic
½ tsp. Salt
¼ cup Grated parmesan cheese
