Tilapia with Edamame and Avocado Salad

Double the recipe and save the leftovers to have the next day over salad greens for a fresh lunch.

Directions
1. Prepare Gorton’s Signature Grilled Tilapia Fillets according to package directions.
2. Meanwhile, toss the avocado with the edamame, red pepper, corn, red onion, lime juice, honey, cumin, salt and pepper. Let stand for 5 minutes. Serve with hot, cooked tilapia fillets.

1 pkg (2 fillets) Gorton’s Signature Grilled Tilapia Fillets
1/2 ripe avocado, chopped
1/2 cup frozen shelled edamame, thawed
1/2 cup finely chopped red pepper
1/3 cup frozen corn, thawed
1/4 cup finely chopped red onion
2 tbsp lime juice
1 tsp honey
1/2 tsp ground cumin
1/4 tsp each salt and pepper
