Grilled Butterfly Shrimp Tacos with Sweet & Spicy Sauce and Mango Salsa

It doesn’t have to be Tuesday to enjoy these grilled Butterfly Shrimp tacos from Uncomplicated Chef. Served with a sweet and spicy sauce and a fresh mango salsa, these grilled shrimp tacos are the perfect meal for any night of the week.

Gorton's Butterfly Shrimp

For the Shrimp
1 package Gorton’s frozen butterfly shrimp
Olive oil spray (for grilling)

For the Sweet & Spicy Sauce
¼ cup sweet chili sauce
1 tbsp sriracha (adjust to taste)
1 tbsp honey
1 tsp lime juice

For the Mango Salsa
1 ripe mango, diced
½ red bell pepper, diced
¼ red onion, finely chopped
1 jalapeño, seeded and minced (optional)
2 tbsp fresh cilantro, chopped
Juice of 1 lime
Salt to taste

For Serving
4–6 small flour or corn tortillas (lightly charred or warmed)
1 cup shredded cabbage or coleslaw mix
Lime wedges
Extra cilantro for garnish

Preparation

Step 1

Preheat grill or grill pan to medium-high. Lightly spray both sides of the frozen breaded shrimp with olive oil. Grill for about 4–5 minutes per side, or until golden, crispy, and heated through.

Step 2

In a bowl, combine mango, red bell pepper, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and chill until ready to serve.

Step 3

In a small bowl, whisk together sweet chili sauce, sriracha, honey, and lime juice.

Step 4

Warm tortillas and layer with shredded cabbage. Top with grilled breaded shrimp, a spoonful of mango salsa, and a drizzle of sweet & spicy sauce.

Step 5

Garnish with cilantro and lime wedges. Serve immediately!
