4 cups small broccoli florets
1 carrot, peeled and sliced
1/2 cup peas
3 tbsp olive oil
1/2 red onion, chopped
1/2 red pepper, chopped
1 small zucchini, sliced
5 cloves garlic, minced
1/2 tsp salt
1/4 tsp freshly ground pepper
1/4 cup Parmesan cheese
12 basil leaves, sliced
Preparation
Step 1
Fish Parmesan: Prepare Gorton’s Crunchy Breaded Fish Fillets according to package directions. Once baked, preheat broiler to high. Spoon 1 tbsp tomato sauce on each fillet and sprinkle each with 1 tbsp mozzarella. Place under broiler for 2 to 3 minutes or until cheese is melted.
Step 2
Pasta Primavera: Meanwhile, prepare pasta according to package directions. Add broccoli and carrots during the last 2 minutes of cooking. Drain, reserving 1/2 cup pasta water.
Step 3
Heat oil in a large skillet set over medium-high heat. Add onion, pepper, zucchini and garlic. Cook, stirring often, for 2 to 3 minutes or until vegetables are tender-crisp. Stir in pasta, broccoli, carrots, salt, pepper and reserved pasta water. Sprinkle with Parmesan cheese. Cook, tossing, for 2 to 3 minutes or until well combined. Stir in basil. Serve with Fish Parmesan.
Notes: Add your favorite vegetables to this simple primavera pasta. Try green beans, cauliflower or butternut squash.
