Baja Fish Tacos with Cabbage Slaw

Bright, zesty, and simply irresistible, these baja tacos come together in no time using Gorton’s Taco Tenders, a colorful veggie slaw and a tasty sauce to tie everything together.

Gorton’s Cilantro Lime Taco Tenders

For the Tacos:
4 Gorton’s Cilantro Lime Taco Tenders
3 cups shredded green cabbage
½ cup tomatoes, diced
2 tbsp red onion, finely diced
2 green onions, thinly sliced
¼ cup fresh cilantro, chopped
Juice of one lime
1-2 tbsp olive oil
Salt and pepper, to taste

For serving:
4–6 small flour or corn tortillas (warmed)
Guacamole
Chipotle sauce
Lime wedges
Extra cilantro for garnish

Preparation

Step 1

Prepare Gorton’s Taco Tenders according to package instructions until crispy and golden.

Step 2

While the fish cooks, prepare the cabbage slaw. In a large bowl, combine green cabbage, tomatoes, red onion, green onions, and cilantro. Drizzle the slaw lightly with olive oil and add fresh lime juice. Season with salt and pepper, then toss until evenly coated. Set aside.

Step 3

Warm tortillas in a dry skillet or directly over a gas flame until soft and lightly charred.

Step 4

Assemble tacos by placing crispy fish tenders into each tortilla. Top generously with cabbage slaw.

Step 5

Finish with guacamole or sauce if desired. Serve immediately with lime wedges on the side.
