No Stir Oven Lemon Herb Risotto

The secret to a gourmet dinner made simple? A no stir, oven-made risotto, and deliciously easy Panko Haddock fillets from Gorton’s.  

Ingredients

Gorton's Panko Breaded Haddock

For the risotto:

2 Gorton’s Panko Haddock Fillets

1 cup no-stir lemon herb risotto (or plain risotto package)

1 1/2 cups water or broth (per risotto package instructions)

1/2 cup frozen peas

1/2 cup chopped asparagus

1 tbsp olive oil

1/4 tsp salt

1/4 tsp black pepper

For serving:

Lettuce, cucumber, and red onion salad (optional)

Lemon zest (optional)

Preparation

Step 1

Place Gorton’s Panko Haddock Fillets on a baking sheet and cook the fillets according to package instructions.

Step 2

If using a no-stir risotto package, prepare according to package instructions. Add frozen peas and chopped asparagus about 10 minutes before the end of cooking.

If using plain risotto, combine risotto, water or broth, olive oil, salt, and pepper in an oven-safe dish. Cover tightly with foil and bake for 30–35 minutes, adding peas and asparagus during the last 10 minutes.

Step 3

Transfer crispy fillets and risotto to a serving platter. Garnish risotto with lemon zest and serve with a side salad, if desired.
