QUINOA FISH FILLET SALAD
Pepper Delight’s Quinoa Fish Fillet Salad is an easy way to get the most of last week’s produce without wishing you’d ordered in. Toss tomato, cucumber, and onion in with our delicious Fish Fillets, and enjoy the satisfying taste of a job well done.
1. Prepare Gorton’s Fish Fillets according to package instructions.
2. Prepare the dressing by combining the ingredients listed for the Greek vinaigrette dressing in a mason jar. Shake well.
3. Combine the salad ingredients together in a bowl, mix with the dressing. Top with Gorton’s Crunchy Breaded Fish Fillets.
Greek Vinaigrette Dressing:
¼ cup olive oil
1 tsp apple cider vinegar
2 garlic cloves (minced)
1 lemon squeezed
½ tsp oregano
¼ tsp pepper
¼ tsp salt
For the Salad:
4 Gorton’s Crunchy Breaded Fillets
1 cup cooked quinoa
1 tomato (chopped)
1 cucumber (chopped)
1 red onion (chopped)
Salt and pepper (to taste)
