Easy Boursin Pasta with Butterfly Shrimp

Be careful if you make this easy Boursin and Butterfly Shrimp pasta, because it might just become your next meal obsession.

Gorton's Butterfly Shrimp

For the pasta:

1 bag Gorton’s Butterfly Shrimp

12 oz spaghetti or pasta of your choice

1 cup asparagus, cut into 2-inch pieces

2 tbsp olive oil

1/2 cup Boursin cheese (or any herbed cream cheese)

1/4 cup grated Parmesan cheese

1 tbsp chopped fresh parsley

Salt and pepper, to taste

For serving:

Lemon wedges

Extra chopped parsley for garnish

Preparation

Step 1

Prepare Gorton’s Butterfly Shrimp according to package instructions.

Step 2

Cook spaghetti according to package instructions. During the last 2–3 minutes of cooking, add asparagus to the boiling water. Drain pasta and asparagus, reserving 1/4 cup pasta water.

Step 3

Return pasta and asparagus to the pot over low heat. Stir in olive oil, Boursin cheese, and Parmesan until creamy, adding reserved pasta water as needed to loosen the sauce. Season with salt and pepper.

Step 4

Toss in crispy Butterfly Shrimp and chopped parsley.

Step 5

Serve immediately with lemon wedges and additional parsley sprinkled on top.
