Greek Baked Salmon With Dill Sauce
Satisfaction is most definitely guaranteed with Fuel Mama’s Mediterranean take on grilled salmon. Easy to make and packed with flavor you don’t have to feel guilty about, this may have to be on the menu every week!
Ingredients
Gorton's seafood
For the salmon:
2 packages Gorton’s Grilled Salmon Fillets
2 TBS Olive Oil, extra virgin
1 TBS Balsamic Vinegar
1 TBS Lemon Juice
1/2 tsp Lemon Pepper
1/2 tsp Dried Oregano
1/2 tsp Garlic Powder
1/2 tsp Salt
For the dill sauce:
1/2 cup Greek Yogurt, Full or non fat
2 TBS Mayonnaise, Full or non fat
1 TBS Chopped Fresh Dill
1 TBS Minced Garlic
1/2 Lemon, Juice Squeezed
1 tsp Apple Cider Vinegar (Red Wine Vinegar works great too!)
1/4 tsp Dried Oregano + Parsley, Each
1 tsp Salt + Pepper to taste
For the Greek salsa:
1 cup Cherry Tomatoes, halved
1 cup Cucumber, chopped
3 TBS Jalapeños, chopped canned
1/4 cup Red Onion, chopped
1 cup Feta Cheese
1/2 TBS Dill, chopped
1 TBS Minced Garlic
1/2 TBS Olive Oil
Apple Cider Vinegar
Lemon Juice
1/2 tsp Dried Oregano
1 tsp Salt + Pepper to taste
Preparation
Step 1
Whisk all ingredients listed under salmon together in a 9×13 baking dish. Add Gorton’s salmon and drag to coat mixture thoroughly on both sides. Allow salmon to sit while you prepare the dill sauce and greek salsa in separate mixing bowls.
Step 2
For the dill sauce, whisk all ingredients into a mixing bowl. Season with salt and pepper to taste. Cover and refrigerate while you do step
Step 3
For the salsa, combine all ingredients in a mixing bowl. Cover and refrigerate.
Step 4
Bake salmon at 400°F for approximately 15-17 minutes.
Step 5
Serve salmon on a bed of brown rice with dill sauce and greek salsa on top!
