Grilled Battered Fish Fillet Lettuce Wraps with Pineapple Salsa

Gorton's Crunchy Breaded Fish Fillets

For the Wraps
6 Gorton’s Crunchy Breaded Fish Fillets
6 large butter lettuce leaves (or romaine hearts)
Lime wedges, for serving

For the Pineapple Salsa
1 cup fresh pineapple, diced
¼ cup red bell pepper, finely chopped
¼ cup red onion, finely chopped
2 tbsp chopped cilantro
1 small jalapeño, finely diced (optional)
Juice of ½ lime
Salt, to taste

For the Sweet & Spicy Sauce
¼ cup sweet chili sauce
1 tsp sriracha (or more to taste)
1 tsp lime juice

Preparation

Step 1

Set your grill to medium heat. Lightly oil the grates or use a grill-safe tray or foil to prevent sticking.

Step 2

Preheat your grill or grill pan to medium heat. Place the battered fillets directly on the grill. Cook for about 10–12 minutes total, flipping halfway through, until golden and crispy.

Step 3

In a bowl, combine pineapple, bell pepper, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Mix and set aside.

Step 4

Whisk together sweet chili sauce, sriracha, and lime juice in a small bowl.

Step 5

Lay a lettuce leaf on a plate, spoon pineapple salsa into the center, top with a grilled fish fillet, and drizzle with sweet & spicy sauce. Serve with lime wedges.
