Directions

  1. Place pancetta in a small sauce pan along with olive oil. Over medium heat, cook the pancetta until crisp, about 7 minutes. Add balsamic, peppers and olives and cook for another 2 minutes, and allow to cool to room temperature.
  2. Prepare Gorton’s Signature Grilled Tilapia fillets according to package directions. Cool slightly.
  3. Place grilled fillets on 6 plates, top with vinaigrette and sprinkle with feta cheese. Serve immediately.

1 cup red, roasted canned pepper, cut into strips
½ lb pancetta cut into small dice
4 oz. kalamata olives, chopped
1 fl. oz. extra virgin olive oil
1 fl oz balsamic vinegar
4 oz. feta cheese, crumbled
