Mediterranean Style Grilled Tilapia
Let tonight’s dinner take you on a getaway with this delicious, Mediterranean-inspired meal.
Ingredients

6 Gortons Signature Grilled Tilapia Fillets
1 cup red, roasted canned pepper, cut into strips
½ lb pancetta cut into small dice
4 oz. kalamata olives, chopped
1 fl. oz. extra virgin olive oil
1 fl oz balsamic vinegar
4 oz. feta cheese, crumbled
Preparation
Step 1
Place pancetta in a small sauce pan along with olive oil. Over medium heat, cook the pancetta until crisp, about 7 minutes. Add balsamic, peppers and olives and cook for another 2 minutes, and allow to cool to room temperature.
Step 2
Prepare Gorton’s Signature Grilled Tilapia Fillets according to package directions. Cool slightly.
Step 3
Place grilled Fillets on 6 plates, top with vinaigrette and sprinkle with feta cheese. Serve immediately.
