Directions

  1. Lemon dill dijon dressing: Place all ingredients except for the yogurt in a medium bowl and whisk to combine. Gradually fold in the yogurt until combined. Keep refrigerated until ready to use.
  2. Salmon wrap: place tortillas on a flat surface and spread lightly with Lemon Dill Dijon Dressing. Place lettuce down the center of the wraps. Top with cucumber and strips of grilled salmon. Roll firmly to enclose filling. Cut in half to serve. Drizzle remaining dressing over the top of the wraps, or serve on the side for dipping.

FOR SALMON WRAP:
Gorton’s Classic Grilled Salmon, prepared according to box, cut into strips
1/2 cup cucumbers, thinly sliced
2 Whole wheat tortillas
4 leaves of butter lettuce

FOR LEMON DILL DIJON DRESSING:
3 tablespoons plain fat free yogurt
1/8 cup freshly squeezed lemon juice from a medium lemon
1 tablespoon finely chopped fresh dill
1 small uncooked scallion, thinly sliced
1/2 teaspoon Dijon mustard
1/2 teaspoon finely grated lemon zest
Pinch of kosher salt
Pinch of freshly ground black pepper
