1. Preheat the oven to 425ºF. Arrange the fillets in a small baking pan. Whisk the maple syrup with the apple juice, orange juice, orange zest, brown sugar, salt, hot sauce, nutmeg and pepper. Brush half the mixture over the fish.
  2. Bake for 10 minutes. Brush with the remaining glaze and bake for an additional 5 to 7 minutes.

Tip: Serve with a green garden salad.

Shortcut: Substitute the maple glaze for your favorite premade glaze!
