Roasted Vegetables and Grilled Fillets
A light but filling meal that’s low fat too! Change it up by using different flavors of Gorton’s Grilled Fillets or vegetables. Easy to prepare and healthy, you really can’t go wrong.
Ingredients

2 Gorton’s Garlic Butter Grilled Fillets
1 large red potato, cubed
1 medium fennel bulb, thickly sliced
1 small red pepper, coarsely chopped
2 cloves garlic, minced
2 Tbsp vegetable or olive oil
1/4 tsp salt
1/4 tsp pepper
Preparation
Step 1
Spray large casserole dish with non-stick spray, toss potato, fennel and pepper pieces together with garlic and oil and pour into baking dish.
Step 2
Sprinkle vegetables with salt and pepper, broil for 5 minutes, place Gorton’s Garlic Butter Grilled Fillets on top, bake 400°F 40 minutes, stirring occasionally and serve immediately.
