2 zucchinis
1/4 tsp oregano
1/2 tsp dried parsley
salt and pepper
1 large sweet potato

Step 1

Cut cauliflower into florets.

Step 2

Add turmeric, red pepper flakes, cumin, 3 tbsp of olive oil, and a dash of salt and stir until the florets are evenly coated.

Step 4

While cauliflower is roasting, cut zucchini into 1/4-inch discs.

Step 5

Add 1 tbsp of olive oil, oregano, parsley, and a pinch of salt and stir until evenly coated.

After cauliflower has been in oven for 10 minutes, take out the sheet pan, add the zucchini and finish roasting. It should be about 15 minutes longer once you add the zucchini.
