Directions

1. Preheat oven to 350°F.

 

2. Place 2 cups of water and 1 cup of brown rice into a medium sauce pan. Bring to a boil, then reduce heat to simmer, cover and cook for 20 minutes until rice is soft and fluffy.

 

3. Cook the Gorton’s Baked Salmon to package directions until reaching an internal temperature of 145°F or higher.

 

4. Meanwhile, rinse and chop off the ends of the broccolini. Heat the cast iron, drizzle with olive oil, add the broccolini and mix to cover with oil, add a pinch of both salt and pepper- cook for about 5 mins until dark green and tender.

 

5. Distribute between two plates, pour the extra sauce from the salmon over the rice, garnish with fresh sliced lemons. Enjoy!
