Directions

1. Heat oil in a large non-stick skillet over medium heat, sauté onion for 3-5 minutes and sprinkle with salt and pepper.
2. Arrange Gorton’s Shrimp Scampi into skillet with onions and cook 10 minutes, turning frequently.
3. Add the tomatoes, capers and red pepper flakes and cook 7-10 more minutes, pour over fettuccine and top with fresh Parmesan cheese.

2 Tbsp olive or vegetable oil
1/2 medium yellow onion, chopped
Pinch kosher salt
Pinch pepper
7 oz tomatoes, diced
2 Tbsp capers, chopped
1/2 tsp red pepper flakes
4 oz spinach fettuccine, prepared
Parmesan cheese, freshly grated
